Avocado and Hummus Grilled Cheese

Grilled cheese sandwiches are one of my favourite things to eat. It’s one of the easiest meals to make, and I also love how ubiquitous they can be. The birth of the avocado and hummus grilled cheese was the lovely union of leftovers in my fridge. I find this sandwich to be super decadent so I paired it with a red pepper and black bean soup that cut the richness of the avocado and hummus.

Avacado and Hummus Grilled Cheese
makes one sandwich

2 slices whole wheat or white bread
1 tsp margarine or butter, softened
1/2 Avocado, sliced half an inch thick
1 1/2 tbsp hummus
3-5 slices of good cheese (I used mozzarella here, cheddar also works, and jalapeño cheddar is the best!)

(ps, spice it up! add a pinch of cayenne and paprika too!!)

Preheat a small pan on medium heat. Butter the two slices of bread, and then flip them over on the working surface (butter side down). Spread hummus on one of the slices of bread, and top with avocado and cheese. Place the other slice bread on top, the buttered sides should be on the outside. Fry on both sides until golden to dark brown. Slice diagonally and serve with soup and lots of sriracha hot sauce.
