Cheat Scones

What if I told you that you could have delicious scone-y goodness in your mouth twenty minutes from now. (And when I mean now, I mean when you’re done reading this).

I like to call these cheat scones since there are only three ingredients. I don’t even think this even qualifies as a recipe because it’s way too easy to make. Ready for the weirdest ingredient list ever? Self raising flour, whipping cream, and 7-UP. Crazy right?

This gem of a recipe came from my mom’s friend, who got it from her sister in New Zealand. I searched this recipe online and I’ve only found it on websites from the NZ side of the world, so pretty much it’s like the country’s best kept secret (not actually). These babies aren’t proper scones, but they’re sooooo good and so easy to make on those early mornings when you’re still in zombie mode. They’re particularly good when you slather them in jam and clotted cream (or in this case, whipping cream). Do try to not eat four of these in one sitting yeah? They’re kinda dangerous like that.

Cheat Scones

makes 12-16 

4 cups self raising flour

300 mL whipping cream

300 mL 7-UP

Preheat oven to 200C or 428F degrees. Measure flour into a large mixing bowl and make a well. Add in whipping cream and 7-Up, and mix in until sticky dough is formed. Turn out onto a well floured counter and shape into a disc. Sprinkle some more flour on top, and then roll out the dough to about an inch thick. Use a scone cutter, cookie cutter, or a round glass to cut out the scones. Place scones on a parchment covered cookie sheet, making sure that all of them are touching. Brush the tops with a bit more cream, and pop into the oven for 10-12 minutes, or until golden. Let the scones cool slightly, pull apart, slather with jam and cream, and devour.
